I had a really rubbish day the other day; the boys were really difficult; my Mum picked an argument with me, I take it you’ve heard of the terrible two’s, well the savage sixties are just as bad; and it’s the run up to the anniversary of my Dad’s death, which is obviously always hard. I actually find the run up difficult rather than the actual day. By the end of the day, I was just emotionally drained and I needed something, SOMETHING but WHAT?! Well rhubarb crumble to be exact but there was no crumble to be had. So I started rifling through the freezer; ah ice cream, that’ll do but I needed something with it, something more pudding-y than JUST ice cream. The following absolutely hit the spot and certainly had some sort of comforting, restorative properties:
Vanilla ice cream (I use Kelly’s clotted cream ice cream)
Toasted flaked almonds
There was something so pleasing about the creaminess of the ice cream, the sweetness of the strawberries, the crumbliness of the biscuits and the crunch of the almonds.
How much you have is entirely up to you but I had two scoops of ice cream, two digestives broken into chunks, a handful of strawberries and several almonds sprinkled over. It ain’t called comfort eating for nothin’!
